Delicious Eats
Malaysian-Inspired Pasta from Christy’s good friend, Shami
1 pound uncooked pasta (spinach linguine is AMAZING with this recipe!)
2 tablespoons olive oil
3-4 cloves garlic, minced
½ bottle white wine (Pinot Grigio/Gris or similar) or about 2 cups vegetable or chicken stock
1-16 oz can of diced or crushed tomatoes
Zest and juice of two limes
½ cup soy sauce
¼ cup honey
¼ cup fish sauce, if desired
Several handfuls of torn cilantro with some reserved for garnish
Salt & pepper to taste
Protein of choice: 1 pound cooked shrimp or cubed tofu
Sliced avocado // lime wedges
Cook pasta according to package directions. In large saucepan or wok, heat olive oil over medium heat and add garlic. Saute garlic until aromatic and lightly golden brown. Add wine or stock, and increase heat to medium high; simmer for five minutes. Add tomatoes, lime zest and juice, soy sauce, honey, and fish sauce, if desired. Taste and season with salt and pepper as needed. Reduce heat to medium and continue to simmer for ten additional minutes. Add cilantro and shrimp or tofu to sauce. Serve over cooked pasta with additional cilantro, sliced avocado, and lime wedges on the side.
