Delicious Eats

Here’s Christy’s take on a simple, delicious, and filling smoothie to give you energy all day long

1 frozen banana

1 heaping TBSP natural peanut butter (or other nut butter)

1 heaping TBSP honey (or other sweetener such as agave or maple syrup)

2 TBSP cocoa powder

2 TBSP Chia seeds

2 TBSP whole flax seeds

2 cups almond milk (or other nut/dairy milk)

A few grinds of sea salt

  1. Combine the banana, nut butter, sweetener, cocoa powder, and Chia seeds in a pint container or in the pitcher of a blender.

  2. Using a mortar and pestle, grind the flax seeds until all of the seeds are mostly broken apart. You don’t have to grind them to a fine powder, but just enough so they resemble a sandy texture. If you don’t have a mortar and pestle, place the seeds in a sealed plastic bag and crush with the bottle of a heavy pot or pan, or use pre-ground flax seeds.

  3. Tip the flax seeds into the pint container or the pitcher of the blender. Add the almond milk and a few grinds of sea salt. Blend with an immersion blender or with your stand blender until smooth. Taste and adjust sweetness, chocolate, and salt levels as necessary. Transfer to the refrigerator and allow to sit for about 15 minutes or until thickened. If too thick, simply add a bit more milk of choice.
